| Die traditionelle Küche der Garfagnana ist, wie alle Küchen bäuerlichen Ursprungs, einfach und reichhaltig bezüglich ihrer Zutaten und der Zubereitung. Neben der Eßkastanie als Basisprodukt für die Talbevölkerung, finden wir als schmackhafte Speisengrundlage auf dem Tisch Schweinefleisch-gerichte, Forellen, Milchprodukte und, was die Produkte aus dem Wald betrifft, natürlich den Steinpilz (porcino). Heute wie gestern werden die Gerichte häufig gemeinsam auf einem Teller angerichtet, wie z.B. die Maispolenta aus dem achtreihigen Garfagnana- Mais und Eßkastanien mit verschiedenen Fleisch- und Gemüsesorten. Einige typische Spezialitäten sind der Kastanienkuchen( “castagnaccio”), die berühmte Dinkelsuppe(“zuppa di farro”) und die sogenannten "necci", runde Teigplatten, die aus Kastanienmehl zubereitet werden. Anschließend presst man sie in speziellen Waffeleisen , (genannt “testi”) zusammen, backt sie über der Glut und bestreicht sie mit frischem, von Schäfern hergestelltem Ricotta- Käse. |
